Chicken is my go-to meat, and BBQ sauce is my go-to condiment because I have a couple of awesome recipes that I LOVE! (Check out my spicy BBQ sauce and my whiskey BBQ sauce!) I decided to combine the two in a super simple, easy as pie crockpot BBQ chicken recipe.
My favorite thing about crockpot recipes is obvious – you just throw everything in and let it go! When it’s done, you have a delicious meal that’s ready for your consumption.
The ingredients for this are super simple. Chicken breasts, salt, pepper and BBQ sauce! For the final setup I used butter lettuce for wrapping, tomatoes and green onions for toppings. But what you do with this BBQ chicken is completely up to you! You could make a BBQ chicken pizza, throw it on a sandwich, or just eat it as is!
To start, you’re going to season your chicken with salt and pepper and place into your crockpot. Then you’re going to cover with the 2 cups of BBQ sauce. If you don’t want it too saucey, use only 1 cup. It’s up to your preference. I like my crockpot BBQ chicken to be a bit moist, and if you make the BBQ sauce yourself you can determine how much sugar you want if you’re concerned about diet goals.
Next, you’re going to turn your crockpot on to high and cook for 3 hours. Or you could set it on low and cook it for 6 hours which will get you a slightly juicier meat. Once your chicken is done cooking, remove it from the crockpot and shred it with two forks.
Once you’re done shredding, you’ll have a delicious bowl full of shredded chicken. At this point I like to throw my chicken back into the crockpot where all the juices are and let it sit for about 10 minutes with the top on to continue soaking up that BBQ’y goodness.
As you can see in the photo above, before going back into the crock the chicken is a bit dry looking. We want it moist and delicious!
You can use this recipe for a variety of different things. I decided to have some crockpot BBQ chicken lettuce cups, but the opportunities are endless!
