One thing I know for myself is that I love zucchini. I love it so much because you can grow it pretty easily at home. I grew one huge zucchini, which was the only one I got off of my plant the entire summer because the dang birds ate every flower that could’ve been a beautiful vegetable!

The other day I was in the mood for hash browns but didn’t have any potatoes, and I didn’t really want something as heavy and starchy as hash browns, so I decided to make these!

Zuchinni Cake Ingredients

Here are the ingredients! Very simple and very easy. Not too much to these, just a little prep and a little love.


This is the massive zucchini I got from my garden! It was the only one the birds didn’t completely devour. I guess it grew too quickly on them! So the first step would be to chop off the bottom and the top. I also had to cut out the little portions that were pecked at by the birds.


Next, you’re going to want to drain what you shredded because the water content in these vegetables is very high. Use either a clean dish cloth or a cheesecloth to drain the water out.

Wrap the grated zucchini up in your towel or cheesecloth and squeeze as hard as you can. Keep squeezing until you get all of the water out.

Once the grated zucchini is dry, put it into a medium sized bowl.

Next, you’re going to add one egg, your bread crumbs, garlic salt, and smoked paprika. Mix it all together with your hands and form into patties. Pop the patties onto a heated and buttered cast iron skillet and cook until browned on both sides.

Voila! Beautiful zucchini cakes. You can serve with some sort of aioli, or a light sour cream sauce. Whatever you want! You can also cook a fried egg and put that on top, delicious!

Zucchini Cakes


  • - 1 large zucchini or 3 small zucchinis.
  • - 1/2 cup bread crumbs
  • - 1 teaspoon of minced garlic
  • - 2 tablespoons garlic salt
  • - 1 teaspoon smoked paprika
  • - 1 egg


  1. Cut the tops and bottoms off of the zucchini.
  2. Grate the zucchini.
  3. Once grated, drain the moisture out of the zucchini using a clean dish towel or a cheesecloth.
  4. Once drained, add additional ingredients.
  5. Form batter into patties.
  6. Cook on a high heat cast iron skillet until done.
